Ingredients
  

  • ¾ cup Butter
  • ½ cup Packed Light Brown Sugar
  • ½ cup Granulated Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour

  • 1 cup Shredded Sweetened Coconut
  • ¾ cup Chopped Pecans
  • 3 cups Finely Shredded Zucchini
  • ½ cup Mini Chocolate Chips
  • cups Powdered Sugar
  • 2 tablespoons Melted Butter
  • 2 to 3 tablespoons Milk
  • ½ teaspoon Ground Cinnamon

Instructions
 

  • Preheat your oven to 325 degrees. Grease a 9×13-inch baking dish to ensure the bars don’t stick.
  • In a large mixing bowl, use an electric mixer to cream together the butter, brown sugar, and granulated sugar. You want the mixture to be light and fluffy, which typically takes about 2 to 3 minutes.
  • Add in the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract until everything is well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, beating just until combined. Be careful not to overmix; you want the batter to be smooth but not tough.
  • Now comes the fun part! Stir in the shredded coconut, chopped pecans, zucchini, and mini chocolate chips. The batter will be thick and chunky, filled with delightful bits of flavor.
  • Spread the batter evenly into your prepared baking dish, ensuring it reaches the corners. This will help the bars bake evenly.
  • Place the dish in the preheated oven and bake for about 25 to 30 minutes. You’ll know they are done when the center is set and a toothpick inserted into the middle comes out clean.
  • Once baked, allow the bars to cool in the pan for about 10 minutes. Then, transfer them to a wire rack to cool completely.
  • While the bars are cooling, prepare the glaze by whisking together the powdered sugar, melted butter, and milk. Adjust the milk to achieve your desired consistency.
  • Once the bars have cooled, drizzle the glaze over the top, allowing it to soak in and add a sweet finish to your Zucchini Bars.
