Equipment

  • Peeler
  • Large Pot
  • Saucepan
  • Wooden Spoon
  • Cutting Board

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion diced
  • 2 carrots peeled and diced
  • 2 stalks celery diced
  • 3 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 8 cups vegetable broth
  • 2 cups dried green split peas rinsed
  • Salt to taste

Instructions

  • Heat olive oil in a large pot over medium heat. As the oil warms, it releases a lovely aroma. You’ll want to use a pot that’s big enough to hold all the ingredients comfortably.
  • Add the diced onions, carrots, and celery to the pot. Cook them for about 5 minutes or until they are softened. Stir occasionally, allowing the vegetables to mingle and develop flavor.
  • Stir in the minced garlic, dried thyme, and ground black pepper. Cook for another minute until fragrant; this will awaken the spices and make your kitchen smell amazing!
  • Add the vegetable broth and rinsed split peas. Watch as the broth bubbles and blends with the ingredients. Bring everything to a boil, stirring occasionally.
  • Reduce the heat to a simmer. Let the soup cook for about 1 hour, stirring occasionally. This simmering phase allows the split peas to soften and break down, thickening the soup.
  • Check for seasoning. After about an hour, taste the soup and add salt to taste. This step is crucial; seasoning can significantly enhance the final dish!
  • Serve hot. Ladle the soup into bowls and consider garnishing with a drizzle of olive oil or a sprinkle of fresh thyme for an elegant touch.
