Ingredients
  

  • 3 cups Flour
  • 1.5 cups Raisins or Currants
  • 1/4 cup Sugar
  • 1 tablespoon Baking Powder
  • 1.5 teaspoons Salt
  • 1 teaspoon Baking Soda
  • 3/4 teaspoon Caraway Seeds
  • 1 cup Nondairy Milk of choice
  • 3/4 cup Plant Based Yogurt
  • 1/3 cup Applesauce
  • 2 tablespoons Oil

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9-inch round pan generously to ensure the bread releases easily after baking. This step is crucial for a beautifully shaped loaf.
  • In a large mixing bowl, combine all the dry ingredients: flour, baking powder, baking soda, salt, and caraway seeds. Stir to ensure everything is evenly distributed.
  • Add in the raisins or currants at this point. They will add a sweet bite to each slice!
  • In a separate bowl, mix together the wet ingredients: nondairy milk, plant-based yogurt, applesauce, and oil. Stir until well combined.
  • Pour the wet mixture into the bowl with the dry ingredients. Stir gently until just incorporated. Be careful not to overmix, as this can lead to a denser bread.
  • Transfer the batter into your prepared pan. Using a spoon, smooth out the top so that it bakes evenly. You can make a small cross on the top with a serrated knife, a classic tradition in soda bread.
  • Place the pan in the center of your preheated oven. Bake for 40 minutes or until the top is lightly golden brown and a toothpick inserted into the center comes out clean.
  • Once baked, remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely. This helps the crust maintain its crunch.
