Ingredients
  

  • 3/4 cup Chia Seeds
  • 2 1/4 cups Nut Milk
  • 1/2 cup Cacao Powder
  • 1/3 cup Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Flaky Sea Salt
  • 1 can (14 ounces) Unsweetened Coconut Cream
  • 2 tablespoons Maple Syrup or Honey
  • 1/2 teaspoon Vanilla Extract

Instructions
 

  • In a bowl, whisk together the chia seeds, nut milk, cacao powder, maple syrup, vanilla extract, and flaky sea salt. Cover and place in the fridge for at least two hours or up to overnight.
  • Transfer the chia mix to a blender and blend on high power until smooth and creamy. Scrape down the sides to incorporate all ingredients and taste for sweetness.
  • To make the coconut cream, pour out the coconut water from the can and scoop the coconut cream into a bowl. Add maple syrup and vanilla extract, and whip until combined.
  • Serve the mousse topped with the whipped coconut cream and optional dried roses and cacao nibs.
  • For coconut hearts, line a baking pan, spread the cream, freeze for 20-30 minutes, and cut out hearts with a cookie cutter.
