- 2 cups heavy cream
- 3 garlic cloves smashed
- 2 fresh thyme sprigs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 pounds turnips peeled and sliced thinly with a mandoline
- 1 1/2 cups shredded Gruyere cheese
- 1 cup shredded Parmesan cheese
Preheat oven to 375 degrees and grease an 11x7-inch baking dish.
Bring heavy cream, garlic cloves, thyme, salt, and black pepper to a simmer. Remove from heat and let sit for 5 to 10 minutes. Strain out garlic and thyme.
Layer 1/3 of turnip slices in baking dish and top with 1/3 of cheese.
Add 2 more layers of turnips and cheese.
Pour the heavy cream on top. Cover with foil and bake for 40 to 45 minutes.
Uncover and bake for 20 more minutes.
