Ingredients
  

  • 1/2 cup toasted walnuts
  • 2 cups cauliflower, cut into florets
  • 1/4 cup fresh cilantro, chopped, plus additional for garnish
  • 2 tablespoons toasted sesame seeds, plus additional for garnish
  • 2 tablespoons natural peanut butter almond butter for Paleo/Whole30
  • 2 tablespoons unsweetened applesauce
  • 1 tablespoon coconut flour
  • 2 teaspoons yellow curry powder
  • 1/2 teaspoon salt
  • Pinch black pepper
  • 1/3 cup avocado, mashed about 1/2 a large avocado
  • 1 tablespoon full-fat coconut milk, canned
  • Pinch salt

Instructions
 

  • Start by preheating your oven to 350°F. While it heats, place the wild walnuts in a small baking pan. Bake until they’re toasted and have a “nutty” aroma, about 10 to 13 minutes. This step not only enhances the flavor of the walnuts but also adds a beautiful crunch to your burgers.
  • Next, generously rub your grill with a high-heat cooking oil and preheat it to medium. This will help prevent the burgers from sticking and ensure they cook evenly.
  • In a large food processor, add all the burger ingredients: toasted walnuts, cauliflower, cilantro, sesame seeds, peanut butter, applesauce, coconut flour, curry powder, salt, and pepper. Process the mixture, stopping occasionally to scrape down the sides, until everything is finely chopped and well combined. The mixture should be sticky enough to hold its shape.
  • Using a 1/3 cup measuring cup, form the mixture into four patties, each about 1/2 inch thick. Make sure they’re compact so they hold together while cooking.
  • Carefully place the burgers on the grill, ensuring they’re positioned on indirect heat (the outer edge of the grill). Cook for 6 minutes, then gently flip them over and cook for an additional 6 minutes. You want them to develop a nice char while remaining moist inside.
  • While the burgers are grilling, prepare the sauce. In a small food processor, combine the sauce ingredients and process until smooth and creamy. This sauce will elevate your burger to a whole new level!
  • To serve, lay a large leaf of butter lettuce on a plate and place a handful of bean sprouts on the lettuce. Next, place the grilled burgers on top of the sprouts.
  • Top the burgers with the creamy sauce you just made, and don’t forget to garnish with toasted peanuts, cilantro, green onions, and sesame seeds. This not only adds flavor but makes the dish visually appealing!
