Ingredients
  

  • 3/4 cup Mayonnaise
  • 1 jar Diced pimentos 4 ounce, drained
  • 1 whole Jalapeño pepper seeds removed, finely chopped
  • 1/2 tablespoon Lime juice
  • 1/4 teaspoon Cumin
  • 1/4 teaspoon Chili powder
  • 1/4 teaspoon Garlic powder
  • 1/4 teaspoon Black pepper
  • 1 block Cheddar cheese 8 ounce, shredded
  • 1 block Pepper Jack cheese 8 ounce, shredded
  • Cilantro for garnish

Instructions
 

  • In a large mixing bowl, combine the mayonnaise, drained diced pimentos, and finely chopped jalapeño. Stir to mix thoroughly.
  • Add the lime juice, cumin, chili powder, garlic powder, and black pepper. Mix until well combined.
  • Fold in the shredded cheddar cheese and pepper jack cheese until evenly distributed.
  • Cover the bowl with plastic wrap and refrigerate for at least 2 to 4 hours before serving.
  • Garnish with fresh cilantro before serving.
