Ingredients
  

  • 1/2 cup Tahini paste
  • 1/2 cup Water or as needed
  • 2 tablespoons Fresh lemon juice
  • 1 large clove Garlic minced (optional)
  • Salt and pepper to taste

Instructions
 

  • In a medium bowl, combine tahini paste and fresh lemon juice. As you mix them together, you’ll notice the paste transforming into a creamy consistency. If it’s too thick, don’t worry; we’ll fix that shortly.
  • Next, gradually add water to the mixture. I suggest starting with a few tablespoons at a time, whisking continuously. This is where the magic happens! You should aim for a pourable consistency, but still thick enough to cling to your favorite salads.
  • Now, here’s where you can adjust the flavor. Add in the minced garlic if you’re using it. Combining the garlic with the dressing will introduce a slight kick and depth. Taste your dressing and decide if it needs a little more salt and pepper.
  • If you find the dressing too thick, add more water, one tablespoon at a time. On the other hand, if it’s too thin, you can incorporate a tad more tahini to achieve your preferred texture.
  • Once you’re satisfied with the flavor and consistency, transfer your Tahini Dressing into a clean Mason jar or airtight container. This keeps it fresh and ready for when you need it.
  • Store the dressing in the refrigerator. It should last for about five to seven days, although it's so good you might find it disappears much faster!

  • Freezing: It’s not recommended to freeze tahini dressing as it may alter the texture. It’s best enjoyed fresh.
