Sweet Potato Pizza

Ingredients
  

  • 1 large sweet potato about 1 pound
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 cup pizza sauce
  • 3/4 cup shredded mozzarella

Instructions
 

  • Preheat your oven to 400ºF and prepare a large baking sheet by lining it with parchment paper.
  • Slice the sweet potato into rounds approximately 1/4-inch thick. Consistency is key here; the thinner the slices, the quicker and more evenly they’ll cook.
  • Arrange the sweet potato slices on your prepared baking sheet. Drizzle them generously with olive oil, ensuring each slice is well-coated.
  • Using your hands, rub the oil into both sides of the sweet potato slices, allowing the oil to soak in. Once you’ve done that, sprinkle the salt, garlic powder, and dried oregano evenly over the top.
  • Place the baking sheet in the oven and bake at 400ºF for about 15 minutes. After this, carefully flip each slice over and bake for an additional 10 minutes or until the slices are tender.
  • Once the sweet potatoes are tender, it’s time to add your toppings! Spoon about 1 to 2 teaspoons of pizza sauce onto each slice, followed by a generous sprinkle of shredded mozzarella.
  • Return the baking sheet to the oven and bake until the cheese has melted, which should take around 10 minutes.
  • When ready, carefully remove the Sweet Potato Pizza from the oven and let it cool for about 5 minutes. If you love fresh herbs, consider topping it with finely chopped basil for an added layer of flavor.
  • Slice and serve warm! If you have any leftovers, remember you can store them in an airtight container in the fridge for up to 5 days.
