Ingredients
  

  • 1 large Sweet Potato peeled and about 12 ounces
  • 2 packages Active Dry Yeast
  • 4 tablespoons Honey
  • 1 teaspoon Olive Oil
  • 1/2 cup Warm Water about 110 degrees
  • 1 cup Buttermilk
  • 6 tablespoons Butter melted and cooled
  • 4 teaspoons Sea Salt
  • 6 cups All-Purpose Flour plus more for workspace
  • 1 egg Egg lightly beaten

Instructions
 

  • Peel the sweet potato and chop it into chunks. Place in a pot with cold water. Bring to a boil and cook until tender, about 20 to 25 minutes. Drain and mash.
  • In the bowl of an electric mixer, combine warm water, yeast, 2 tablespoons of honey, and olive oil. Stir and let sit until foamy for about 15 minutes.
  • Once foamy, add the mashed sweet potatoes, remaining honey, 4 tablespoons of butter, buttermilk, and sea salt. Mix well.
  • Gradually add all-purpose flour with the mixer on low until a sticky dough forms. Knead with the dough hook for about 2 to 3 minutes.
  • Brush a large bowl with melted butter and place the dough in it. Cover and let rise until doubled, about 2 hours.
  • Knead the dough until smooth, divide in half, and roll into ropes. Cut pieces of dough and roll into balls. Place in greased baking dishes.
  • Cover and let rise again for about 30 to 45 minutes. Preheat oven to 375 degrees.
  • Brush the tops of the rolls with the beaten egg and bake for 20 to 25 minutes until golden brown.
  • Let cool for a few minutes before serving.
