  • 1 large egg
  • 0.5 cup Lakanto Monkfruit Sweetener Golden
  • 1 tsp baking powder
  • 0.5 tsp vanilla
  • 1 cup Skippy Creamy No-Sugar Added Peanut Butter
  • 1 tsp water
  • 0.5 tsp sea salt
  • 0.33 cup chopped peanuts (optional)

Instructions
 

  • Preheat your oven to 350F/180C. This step is essential as it ensures that your cookies bake evenly and thoroughly.
  • In a mixing bowl, use an electric beater to combine the egg, Lakanto Monkfruit Sweetener, baking powder, and vanilla. Beat for about one minute until the mixture is smooth and well-blended.
  • Add the peanut butter, water, and sea salt to the bowl. Beat again until everything is combined. The mixture will be a bit dry, but that’s normal; just ensure the peanut butter is fully integrated.
  • If you are using chopped peanuts, chop them now and add them to the dough. Mix a few more times to distribute the nuts evenly.
  • Prepare a large cookie sheet by covering it with a silicone baking mat or parchment paper. This prevents sticking and keeps the bottom of your cookies from browning too much.
  • Using a tablespoon, scoop out the cookie batter. Roll each scoop into a ball and then gently flatten with a fork to create a crisscross pattern. I typically get about twenty small cookies from this recipe!
  • Place the cookie sheet in the preheated oven and bake for 14 to 15 minutes. You’ll know they are done when they feel firm and have a slight golden color. The cookies will still be soft to the touch.
  • Once baked, let the cookies cool on the sheet for about 30 minutes. This will help them firm up before you handle them.
  • If you have extra cookies, store them in the freezer, but try to limit yourself to one at a time!
