Ingredients
  

  • 18 ounce white or cremini mushrooms cleaned
  • 10 ounce chopped frozen spinach defrosted and drained well
  • 1/4 cup parmesan cheese
  • 2 tablespoons olive oil plus more for brushing onto mushroom caps
  • 1 teaspoon dried Italian herbs
  • 1/4 cup plain bread crumbs
  • 1/4 teaspoon kosher salt
  • 1 small garlic clove minced

Instructions
 

  • Preheat your oven to 400 degrees Fahrenheit.
  • Remove the stems from the mushrooms and discard them. Use a damp towel to clean the caps gently.
  • In a mixing bowl, combine the drained spinach, parmesan cheese, olive oil, Italian herbs, salt, minced garlic, and bread crumbs. Mix until well incorporated.
  • Spoon the filling generously into each mushroom cap, packing it well.
  • Lightly brush the tops of the stuffed caps with olive oil.
  • Arrange the stuffed mushrooms on a baking sheet, spaced out for even cooking.
  • Bake for about 20 minutes until tender and slightly golden on top.
  • Remove from the oven and let cool for a minute before serving.
