Ingredients
  

  • 1 box strawberry cake mix
  • 1/2 cup salted butter melted
  • 2 large eggs
  • 2 tablespoons strawberry gelatin
  • 8 ounces cream cheese softened
  • 1/4 cup salted butter softened
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 1 to 2 tablespoons heavy cream
  • 20 Golden Oreos about ½ standard package
  • 4 tablespoons strawberry gelatin the remaining amount
  • 4 tablespoons salted butter melted

Instructions
 

  • First, preheat your oven to 350°F. This ensures that your brownies will bake evenly. Line an 8×8-inch glass baking dish with parchment paper, spray it with non-stick cooking spray, and set it aside.
  • In a medium mixing bowl, mix together 1/2 cup melted butter, 2 large eggs, 1 strawberry cake mix, and 2 tablespoons strawberry gelatin. Blend these ingredients until well combined. You’ll notice that the batter will be thick, which is just what we want.
  • Next, use a rubber spatula to spread the batter evenly into the prepared baking dish. Bake for about 25 minutes. Keep an eye on them! You want the edges to be set and the center to be slightly soft. Once baked, allow them to cool completely.
  • While the brownies cool, it’s time to make the frosting. In a bowl, beat together 8 ounces cream cheese, 1/4 cup softened butter, and 1 teaspoon vanilla extract until combined. Gradually add 1/2 cup powdered sugar and 1 to 2 tablespoons heavy cream, beating until smooth and fluffy.
  • Once the brownies are completely cool, it’s time to spread the cream cheese frosting over the top. Try to spread it evenly for a nice finish.
  • In a food processor, pulse 20 Golden Oreos until they are broken into crumbs, ensuring there are some larger chunks for texture. This step adds a delightful crunch.
  • Sprinkle the remaining 4 tablespoons strawberry gelatin over the cookie crumbs, and drizzle with 4 tablespoons melted butter. Pulse again until combined. This mixture will create a flavorful topping.
  • Now, sprinkle the cookie crumbles over the frosted brownies, pressing them down gently into the frosting, so they stick well.
