  • 1/2 cup Chopped onion
  • 1/2 cup Chopped red bell pepper
  • 2 cloves Garlic, minced
  • 1 teaspoon Smoked paprika
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 cup Crushed tomatoes
  • 4 large Eggs
  • 1/4 cup Chopped fresh parsley

Instructions
 

  • Preheat your oven to 375°F (190°C). This step is crucial for ensuring the eggs cook perfectly and the dish is warmed through.
  • In a large, oven-safe skillet, heat the olive oil over medium heat. You want the oil to shimmer but not smoke, indicating it's the perfect temperature for sautéing.
  • Add the chopped onion and red bell pepper to the skillet. Sauté them until they are softened, about 5 minutes. You should see the onions turning translucent and the peppers softening.
  • Stir in the minced garlic, smoked paprika, salt, and black pepper. Cook for another minute until you can smell the fragrant spices, giving the mixture a good stir to combine.
  • Pour in the crushed tomatoes and bring the mixture to a simmer. Let it bubble for a few minutes, thickening slightly and melding all those beautiful flavors.
  • Make four wells in the tomato mixture using a spoon. Crack a large egg into each well. Take your time here; you want the yolks to sit nicely in the sauce.
