Ingredients
  

  • 1 tablespoon coconut oil
  • ½ medium onion finely chopped
  • 2 cloves garlic minced
  • 1 pound ground beef
  • 2 teaspoons Penzeys Turkish seasoning
  • 1 teaspoon Diamond Crystal kosher salt
  • Freshly ground black pepper
  • 2 tablespoons ghee

Instructions
 

  • Gather your ingredients and prep them well. Start by finely chopping the onion and mincing the garlic. This will ensure they blend well into the meat mixture.
  • Heat up the coconut oil in a small cast iron skillet over medium heat. You want the oil just hot enough to sauté the onions without burning them.
  • Once the pan is hot, sauté the diced onion with a sprinkle of kosher salt and black pepper. As the onions soften and turn translucent, add the minced garlic to the pan. Stir everything until the garlic becomes aromatic, which should take about thirty seconds. Then, transfer the mixture to a small bowl to cool.
  • In a large mixing bowl, combine the ground beef, cooled onion and garlic mixture, Penzeys Turkish seasoning, along with several cranks of freshly ground black pepper and a generous pinch of kosher salt. Using your hands, mix everything gently to avoid overworking the meat.
  • Form the meat mixture into eight sliders. Place them on a platter lined with plastic wrap. Cover the patties with another piece of plastic wrap and freeze them for about two hours. This helps them firm up for cooking.
  • Once the patties are solid, carefully vacuum seal them in a bag. This will keep them fresh in the fridge until you’re ready to cook.
  • When you’re ready to enjoy your sliders, drop them into the sous vide water bath set to 130°F for about forty-five minutes. This will ensure they cook perfectly.
  • After the cooking time is up, remove the sliders from the water bath and dry them gently with paper towels. This step is key for getting that nice sear.
  • Heat up the ghee in a large cast iron skillet over high heat. Once the skillet is hot, sear the burgers for approximately forty-five seconds on each side. You should see a beautiful golden crust forming as they cook.

Notes

When storing leftovers, make sure to keep them in an airtight container in the fridge. For freezing, vacuum seal them to maintain freshness. These sliders are great for meal prep, allowing you to have delicious meals ready to go!
