- 1 pound lean ground beef
- ½ cup diced yellow onion about ½ medium onion
- 2 teaspoons minced garlic about 2 cloves
- 1 15-ounce can tomato sauce
- salt and pepper to taste
- 12 ounces egg noodles
- 1 cup sour cream
- 1 ¼ cups cottage cheese
- 1 teaspoon salt
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- 1 cup shredded mozzarella cheese
- sliced green onions for garnish
Preheat the oven to 350 degrees Fahrenheit and spray a 9×13-inch baking dish with cooking spray.
In a large skillet, sauté the 1 pound lean ground beef and ½ cup diced yellow onion over medium-high heat. Cook until all the beef is browned, 8 to 10 minutes. Add in 2 teaspoons minced garlic and sauté another minute.
Add in 1 (15-ounce) can tomato sauce and salt and pepper to taste, sauté for another 5 minutes, stirring continually. Remove from heat and set aside.
Cook the 12 ounces egg noodles according to package directions, drain, and set aside.
In a separate bowl, mix together 1 cup sour cream, 1 ¼ cup cottage cheese, 1 teaspoon salt, 1 teaspoon onion powder, ½ teaspoon garlic powder, and ½ teaspoon black pepper.
Mix the egg noodles into the sour cream mixture and pour half of the noodle mixture into the baking dish. Pour half of the meat mixture on top of the noodles.
Repeat one more layer of noodles, then meat sauce, and top it with 1 cup shredded mozzarella cheese.
Bake the casserole for 30 to 35 minutes or until the cheese is bubbly and golden.
Remove from the oven and allow it to rest for 10 minutes before topping with sliced green onions for garnish and serving.
