Ingredients
  

  • 3 eggs Eggs
  • 1 cup Cottage Cheese
  • 1/2 teaspoon Vanilla
  • 2 tablespoons Honey or Maple Syrup
  • 1/2 cup Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Cinnamon
  • 1/8 teaspoon Kosher or Sea Salt
  • 1 tablespoon Coconut Oil
  • 1 banana Banana
  • 2 tablespoons Honey or Maple Syrup

Instructions
 

  • In a medium bowl, start by whisking together the wet ingredients: eggs, cottage cheese, and vanilla. Make sure everything is well combined to ensure a smooth batter.
  • In another bowl, combine the dry ingredients: flour, baking powder, cinnamon, and salt. Whisk them together until they’re evenly mixed.
  • Now, pour the dry mixture into the wet ingredients. Gently combine them using a whisk, but don’t over-mix. You want the batter to remain a bit lumpy for the fluffiest pancakes.
  • Next, place a nonstick skillet or griddle over medium-low heat. Add about 1/4 to 1/2 tablespoon of coconut oil to the skillet, allowing it to melt and coat the surface.
  • Using a ladle, pour about 1/4 cup of pancake batter onto the preheated skillet. Spread it gently in a circular motion with the bottom of the ladle to form a round pancake.
  • Cook the pancake for about 2 minutes, watching for bubbles to form on the surface. The bottom should turn golden brown. Once you see bubbles, it’s time to flip!
  • Carefully flip the pancake using a spatula, and cook for an additional minute or so until the other side is also golden brown.
  • Once cooked, transfer the pancake to a covered plate to keep warm while you repeat the process with the remaining batter. This should yield approximately 8 pancakes.
  • To serve, stack a few pancakes on a plate, and feel free to top them with sliced banana, mixed berries, and a generous drizzle of honey or maple syrup.

Notes
