Equipment

  • Food Processor
  • Large Nonstick Skillet

Ingredients

  • 1/2 pound shrimp peeled and deveined medium to large fresh
  • 1/2 cup green onion sliced
  • 1 piece egg white
  • 1 tablespoon pimentos diced, drained
  • 2 1/2 teaspoons soy sauce
  • 2 teaspoons sesame oil toasted
  • 2 teaspoons cornstarch
  • 2 cloves garlic minced
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon ginger minced fresh
  • 1/4 teaspoon cayenne pepper
  • vegetable oil
  • 7 slices bread white sandwich, toasted and crusts removed
  • 2 teaspoons sesame seeds toasted
  • sweet garlic sauce for serving

Instructions

  • Place shrimp, green onion, egg white, pimentos, soy sauce, sesame oil, cornstarch, garlic, salt, ginger, and cayenne in a food processor and pulse 5 to 6 times. You want everything finely minced. If you don't have a food processor, you can finely chop the shrimp with a knife and mix everything in a bowl.
  • Pour 1/4-inch of vegetable oil into a large nonstick skillet. Heat until hot.
  • Cut each piece of bread in half diagonally. Spread shrimp mixture onto 1 side of each piece of bread. Sprinkle with sesame seeds.
  • Working in batches, fry bread, shrimp side down until golden, about 1 to 2 minutes. Gently flip over and fry until the other side is golden brown.
  • Drain on a paper towel-lined plate.
  • Serve with sweet garlic sauce.

Notes

  • Tip 1: Store any leftover Shrimp Toast in an airtight container in the refrigerator. They’ll be good for up to three days. Reheat in the oven for the best texture.
  • Tip 2: You can freeze the uncooked Shrimp Toast before frying. Place them on a baking sheet, freeze them, and once solid, transfer to a zip-top bag. Fry them straight from frozen.
  • Tip 3: Serve your Shrimp Toast with a fresh salad or steamed vegetables for a balanced meal.
  • Tip 4: Add different spices or herbs to the shrimp mixture, like cilantro or lime zest, for a new twist on the classic recipe.
  • Tip 5: Consider garnishing with finely chopped herbs or a slice of lime for a refreshing touch before serving.
