Ingredients
  

  • 2 tablespoons Butter
  • 1 small Onion, diced
  • 3 cloves Garlic, minced
  • 24 oz Roasted red peppers 2 jars, drained
  • 1 cup Chicken stock or vegetable broth
  • Salt & Pepper, to taste
  • 1/4 teaspoon Dried basil
  • 1/2 to 3/4 cup Heavy cream
  • 3/4 cup Grated parmesan cheese
  • 1 inch Cooked pasta

Instructions
 

  • In a large skillet, melt butter over medium heat. Once melted, add the onion and sauté until it becomes tender and translucent, which should take about 5 minutes. This is where the base flavors start to develop!
  • Add the garlic to the skillet and cook for another minute, until it's fragrant. Be careful not to burn it; you just want to release those lovely aromatics.
  • Remove the skillet from heat and transfer the cooked onions and garlic into a high-powered blender. This is where we’ll blend everything into a smooth, luscious sauce.
  • Into the blender, add the roasted red peppers, chicken stock (or vegetable broth), salt, pepper, and dried basil. Blitz everything until it’s completely smooth. Don’t worry if you need to add a little more broth or cream to get it moving; the smoother the sauce, the better!
  • Pour the blended mixture back into the skillet and stir in the heavy cream. Cook over low to medium-low heat, stirring occasionally, until the sauce is heated through and slightly thickened. You don’t want it to boil, as this could cause the cream to curdle.
  • While the sauce is warming, cook your pasta according to package instructions in a separate pot until al dente. This typically takes about 8 to 10 minutes, depending on the type of pasta you use.
  • Once the pasta is cooked, drain it and immediately add it to the skillet with the sauce. Toss everything together, ensuring the pasta is well coated with the creamy sauce.
  • Add the parmesan cheese to the skillet, tossing again to combine. Taste the pasta and adjust the seasoning with more salt and pepper if needed.
