Equipment

  • Nordic Ware Aluminum Half Sheet Pan

Ingredients

  • 40 pieces salted saltine crackers
  • 1 cup unsalted butter
  • ¾ cup packed light brown sugar
  • 12 ounces milk, dark, or white chocolate chips
  • ¾ cup chopped pecans (optional)

Instructions

  • Preheat your oven to 400°F. Preheating is essential as it ensures the saltine crackers become wonderfully crisp. While the oven is warming, line a rimmed baking sheet or jelly roll pan with foil and spray it with nonstick spray.
  • Now, line up the saltine crackers on the prepared baking sheet so they are touching. This creates a solid base for your toffee. Make sure they are placed neatly and evenly for the best results.
  • In a medium-sized saucepan over medium heat, bring the unsalted butter and light brown sugar to a boil, stirring frequently. Watch closely as the mixture heats. The butter will melt and combine with the sugar, creating a rich caramel-like sauce.
  • Once the mixture begins to boil, set a timer and let it boil for three minutes. It’s crucial to keep stirring to prevent burning. The transformation of the butter and sugar should be smooth and bubbly.
  • Immediately remove the saucepan from the heat and carefully pour the hot mixture evenly over the prepared saltine crackers. The hot toffee will spread quickly, so work quickly to cover all crackers.
  • Now, pop the baking sheet into the preheated oven and bake for five minutes. During this time, the sugar mixture will become bubbly, and the saltines will start to float slightly.
  • After five minutes, remove the baking sheet from the oven. Use the tip of a knife to gently line the crackers back up if they’ve shifted. This is an important step for presentation.
  • Sprinkle the chocolate chips evenly over the top of the hot toffee and return the pan to the oven for 1 to 2 minutes, just until the chocolate is soft enough to spread. Keep an eye on it; we don’t want to burn the chocolate!
  • With an offset spatula, evenly spread the melted chocolate over the crackers. This layer will add a creamy texture that complements the toffee beautifully.
  • If you're using chopped pecans, sprinkle them evenly over the melted chocolate. This adds both flavor and a delightful crunch. Let the entire mixture cool completely. If you're in a hurry, place the pan in the refrigerator to speed things up.
  • Once cooled, break the toffee into pieces and store them in an airtight container. Enjoy your homemade Saltine Toffee with family and friends!
