  • 1 cup Creamy Peanut Butter
  • 2 cups Bisquick Mix
  • 1 teaspoon Vanilla Extract

  • 48 Rolo Candies

  • Preheat your oven to 375 degrees Fahrenheit. Line two rimmed baking sheets with parchment paper to prevent sticking.
  • In a large bowl, combine sweetened condensed milk and creamy peanut butter. Use a hand-held electric mixer to beat them together until you achieve a smooth, creamy consistency.
  • Mix in the Bisquick mix and vanilla extract, ensuring everything is well combined and that no dry ingredients remain. The dough should be thick and slightly sticky.
  • Shape the dough into 48 balls, approximately one inch in diameter. This size ensures that each cookie bakes evenly and has enough room for the Rolo candies.
  • Place some granulated sugar in a small bowl. Roll the tops of the dough balls in the sugar, making sure they’re well coated before placing them on the prepared baking sheets.
  • Arrange the balls on the sheets, leaving space between them as they won’t spread much during baking.
  • Bake in the preheated oven for about 7 to 9 minutes. You’ll want them just firm on the edges but soft in the center.
  • Once they’re out of the oven, take a Rolo candy and gently press it into the center of each cookie. The heat will cause the candy to melt slightly.
  • Return the cookies to the oven and bake for an additional minute. This will ensure the Rolo candies meld beautifully with the cookie.
  • Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack. This helps them firm up a bit while still being soft on the inside.
