Ingredients
  

  • 3 heads Broccoli halved if super large
  • 2 tablespoons Extra virgin olive oil
  • 1/4 cup Extra virgin olive oil
  • Kosher salt
  • Black pepper
  • 2 teaspoons Lemon zest
  • 1 teaspoon Smoked paprika
  • 1 clove Garlic grated
  • Chili flakes
  • 1/4 cup Fresh chopped dill and/or parsley
  • 2 tablespoons Sesame seeds
  • 1 cup Pomegranate arils
  • 1/2 cup Extra virgin olive oil
  • 1/2 cup Tahini
  • 2 tablespoons Lemon juice
  • 2 teaspoons Worcestershire sauce
  • 1-2 cloves Garlic grated
  • 1/2 cup Parmesan cheese grated

Instructions
 

  • Preheat your oven to 450° F. This high temperature will ensure that your broccoli gets nicely roasted, becoming tender and slightly charred.
  • On a baking sheet, toss the broccoli with 2 tablespoons of olive oil, kosher salt, and black pepper. Make sure every piece is coated evenly. This is key for flavor and texture!
  • Bake for 20 minutes, then flip the broccoli and bake for another 10 to 15 minutes. You want to achieve a light char, which adds to the flavor profile.
  • While the broccoli is roasting, in a bowl, mix 1/4 cup of olive oil with the smoked paprika, grated garlic, lemon zest, chili flakes, and a sprinkle of salt. This mixture will be used to dress the broccoli later.
  • Once the broccoli is out of the oven, spoon the olive oil mixture over it, using as much as you like. Let it sit for 5 to 10 minutes. This allows the flavors to meld beautifully.
  • Now, it’s time to make the dressing. In a blender, combine the tahini, lemon juice, Worcestershire sauce, and the extra grated garlic. Blend until smooth.
  • If the dressing is too thick, add 1/4 to 1/2 cup of water to thin it out to your preferred consistency. Taste and adjust the salt if necessary.
  • To serve, plate the roasted broccoli and generously drizzle with the garlicky tahini dressing.
