  • 1 tablespoon Olive Oil
  • 3 cloves Garlic chopped

  • 2 teaspoons Fresh Chopped Parsley
  • 1 teaspoon Fresh Lemon Juice

  • Begin by cutting the cauliflower into manageable florets. It’s important to cut them into smaller pieces so they can fit easily into your food processor. Make sure to remove any tough stems for the best texture.
  • Next, pulse the florets in the food processor in batches. You want to achieve a rice-like texture, so be careful not to over-process. If you do, the cauliflower will become mushy!
  • Once all the cauliflower is riced, preheat your oven to 425°F (or 220°C). This high temperature will help achieve a lovely, roasted flavor.
  • Prepare a baking sheet by spraying it with a bit of olive oil. This prevents the cauliflower from sticking and helps it to roast evenly.
  • In a large mixing bowl, combine the riced cauliflower, olive oil, chopped garlic, and kosher salt. Toss everything together until the cauliflower is well-coated.
  • Spread the mixture evenly on the prepared baking sheet. Make sure to keep it in a single layer for even roasting.
  • Roast in the oven for about 25 minutes, stirring halfway through. You want the cauliflower to turn golden brown. This caramelization adds a delicious depth of flavor.
