  • 1 pound baby carrots rinsed and dried well
  • 2 tablespoons olive oil
  • 2 tablespoons melted butter
  • 3 tablespoons honey
  • ¼ teaspoon granulated garlic
  • ½ teaspoon salt
  • Chopped parsley and a little cracked black pepper for optional garnish

  • Preheat your oven to 400 degrees Fahrenheit. This high temperature is key to achieving that beautiful roast. You want the carrots to caramelize and become tender.
  • Line a baking sheet with either parchment paper or aluminum foil. This will make it easy to clean up afterwards, and it also helps in even roasting.
  • Rinse and dry the baby carrots thoroughly. Moisture can prevent them from roasting properly, so it’s essential to make sure they’re dry before you place them on the baking sheet.
  • In a medium-sized bowl, combine the melted butter, olive oil, honey, granulated garlic, salt, and a bit of cracked black pepper. Whisk it together until well combined.
  • Add the dried baby carrots into the bowl with the honey mixture. Toss them gently to coat each carrot evenly.
  • Once coated, spread the carrots out in a single layer on the prepared baking sheet.
  • Place the baking sheet in the preheated oven and roast for 30 to 40 minutes. You'll want to check on them after the first 20 minutes.
  • Once they’re fork-tender and beautifully golden, remove them from the oven. They will have a lovely gloss from the glaze.
