  • Start by taking your fresh rhubarb and chopping it into small pieces. Aim for about one cup of chopped rhubarb. The smaller the pieces, the more flavor they can release into the syrup.
  • Next, combine the chopped rhubarb with equal parts of sugar in a container that has a tight-fitting lid. This will allow you to shake the mixture vigorously later on.
  • Now, add in the water. The amount should be around one cup, but feel free to adjust depending on how concentrated you want your syrup to be.
  • Seal the container tightly and give it a good shake. You want to ensure that the sugar dissolves and combines well with the rhubarb and water.
  • After shaking, let the mixture sit at room temperature for at least a few hours; overnight is best. If you want to go longer, you can even let it steep for up to three days! The longer it sits, the more intense the flavor will be.
  • Once the syrup has steeped to your liking, it's time to strain it. Use a cheesecloth or a fine-mesh sieve to separate the liquid from the rhubarb solids.
