Equipment

  • Mixing Bowl
  • Oven
  • Baking Sheet

Ingredients

  • 12 oz Greek yogurt
  • 3/4 cup Raspberries
  • 2 tsp Honey
  • 5 Wonton wrappers
  • 1 tbsp Sugar
  • 1/4 tsp Cinnamon
  • pinch Ginger powder

Instructions

  • Preheat your oven to 400 degrees F. This is the perfect temperature for crisping up those wonton wrappers. You want them to be golden brown and delicious.
  • Lightly spray a baking sheet with cooking spray and carefully place the cut wonton wrappers down. Make sure they are spaced out so they crisp evenly.
  • Then, lightly spray the top of the wonton wrappers with cooking spray as well. This ensures they get that golden color and crunchiness we’re looking for.
  • In a small bowl, combine the sugar, cinnamon, and ginger powder. Mixing these together will create a sweet spice mix to sprinkle over the wontons.
  • Sprinkle the sugar mixture generously over the wonton wrappers. This will give them an added layer of flavor as they bake.
  • Bake for about 3 to 4 minutes or until the wonton wrappers are golden brown and crisp. Keep an eye on them, as they can burn quickly!
  • Once they’re done, remove them from the oven and let them cool completely. They will harden a bit as they cool, creating that perfect crunch.
  • Meanwhile, in a separate bowl, divide the greek yogurt, raspberries, and honey between two small bowls or parfait cups. Start with a layer of greek yogurt.
  • Next, add a layer of raspberries on top of the greek yogurt followed by a drizzle of honey. Repeat the layers until you reach the top of your cups.
  • Finally, serve your parfait with the crispy wonton crisps on the side. Enjoy your delicious creation!

Notes

  • Storage: If you have leftovers, store them in an airtight container in the fridge. However, it's best to keep the wonton wrappers separate to maintain their crispiness.
  • Freezing: While the parfait itself doesn’t freeze well, you can freeze the greek yogurt in an ice cube tray. Then blend it into smoothies later!
  • Pairing: This parfait pairs wonderfully with a side of granola or even some nuts for added crunch and flavor.
  • Variations: Feel free to swap out raspberries for seasonal berries like strawberries or blueberries. You can even use diced fruits like mango or kiwi.
  • Sweetness level: Adjust the amount of honey based on your sweetness preference. You can also use maple syrup for a different flavor profile.
