Ingredients
  

  • 2 tablespoons Olive oil divided
  • 1 Yellow onion thinly sliced
  • 4 cloves Garlic minced
  • 1 Red bell pepper thinly sliced
  • 1/2 Green bell pepper thinly sliced
  • 1/2 Yellow bell pepper thinly sliced
  • 1 1/2 pounds Boneless skinless chicken breasts thinly sliced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Oregano
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Soy sauce
  • Kosher salt to taste
  • Fresh ground black pepper to taste
  • 1 1/2 cups Shredded provolone cheese

Instructions
 

  • Start by placing a large skillet over medium-high heat and adding one tablespoon of olive oil. Wait until the oil is hot.
  • Once the oil is shimmering, add the sliced bell peppers and onion. Season with kosher salt and fresh ground black pepper. Sauté the vegetables, stirring occasionally until they become tender, about three to five minutes.
  • Next, add the minced garlic and sauté for another minute until fragrant. Then, transfer the veggies to a plate and set aside.
  • Now, add the remaining tablespoon of olive oil to the skillet. After the oil heats up, introduce the sliced chicken along with the Italian seasoning, smoked paprika, onion powder, oregano, salt, and pepper.
  • Spread the chicken out evenly in a single layer and allow it to cook without stirring for a few minutes. This will help it brown beautifully.
  • As it cooks, you’ll notice the color changing to a lovely golden brown. Keep sautéing until the chicken is cooked through, then add the soy sauce to enhance the flavor.
  • Once the chicken is cooked, return the sautéed onions and bell peppers to the skillet. Stir everything together, allowing the juices to combine.
  • Now it’s time to top your mixture with the shredded provolone cheese. Cover the skillet with a lid and let it cook for one to two minutes, or until the cheese melts into a gooey delight.
