Ingredients
  

  • 1 cup half and half
  • 1 Tbsp cornstarch
  • 8 oz medium cheddar cheese, shredded

Instructions
 

  • In a medium saucepan, whisk together the half and half and cornstarch until smooth.
  • Place the saucepan over medium-high heat, bringing the mixture to a light boil while stirring constantly.
  • Once boiling, reduce the heat and let it simmer for about 30 seconds, continuing to stir.
  • Remove the saucepan from heat and immediately stir in the shredded cheddar cheese.
  • Serve the warm dip immediately with tortilla chips for dipping.

Notes

  • Tip 1: Don't use pre-shredded cheese. Buy a block and shred it yourself.
  • Tip 2: The dip will be a little runny at first, but will nicely thicken as it cools.
  • Tip 3: This dip is best enjoyed right after making.
  • Tip 4: The sauce will not reheat well, so scale as needed.
