Equipment

  • KitchenAid stand mixer
  • Nordic Ware Metal 9×13 Covered Cake Pan

Ingredients

  • 2 cups All-Purpose Flour
  • ¾ cup Cold Unsalted Butter Cubed
  • cup Powdered Sugar
  • Pinch Salt
  • ½ cup Unsalted Butter Softened
  • 1 cup Light Brown Sugar
  • Pinch Salt
  • cup Light Corn Syrup
  • 1 teaspoon Pure Vanilla Extract
  • ¼ cup All-Purpose Flour
  • 3 cups Coarsely Chopped Pecans

Instructions

  • Preheat your oven to 350° F.
  • Line a 13×9-inch metal pan with foil, allowing an overhang about 2 inches off the sides. Lightly grease the foil.
  • In a food processor, blend together 2 cups of all-purpose flour, ¾ cup of cold unsalted butter, ⅔ cup of powdered sugar, and a pinch of salt until the mixture resembles coarse sand. Press firmly into the bottom of the prepared pan and slightly up the sides. Bake until the edges are golden, about 20 minutes.
  • Meanwhile, in a stand mixer fitted with paddle attachment, add ½ cup of unsalted butter, 1 cup of light brown sugar, and a pinch of salt and mix on medium speed until light and fluffy, about 3 minutes.
  • Add ⅓ cup of light corn syrup, 1 teaspoon of pure vanilla, ¼ cup of all-purpose flour, and 3 cups of coarsely chopped pecans and mix until just combined.
  • Spread the filling over the baked crust. It’s okay if some of the crust peeks through.
  • Bake until the filling is very bubbly and a deep caramel color, about 30 to 35 minutes. Remove from the oven and allow bars to cool completely in the pan.
  • Remove the bars from the pan by pulling up the foil sides and putting it on a cutting board. Cut bars in desired size with a sharp knife and arrange them on a serving tray.

Notes

  • Tip 1: Make sure you know how to measure flour correctly. Use this same method for measuring the powdered sugar.

  • Tip 3: If you have run out of brown sugar, use a simple brown sugar substitute instead.
