- 4 ounces cream cheese softened
- ½ cup peanut butter
- ½ cup powdered sugar
- 1 ½ tablespoons heavy cream
- ¼ teaspoon cinnamon
- 4 large eggs
- 1 cup milk
- 2 tablespoons maple syrup
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
- 8 slices thick white bread preferably stale
- 4 tablespoons butter
Beat cream cheese and peanut butter with an electric mixer until blended.
Add powdered sugar, heavy cream, and cinnamon and beat until smooth.
In a shallow dish, whisk eggs, milk, maple syrup, vanilla extract, and salt.
Spread half the pieces with the peanut butter mixture and place the remaining 4 pieces on top to form 4 sandwiches.
Place a large skillet or griddle over medium-high heat.
Dip each side of each sandwich in egg mixture. Just coat the outside of the bread in egg mixture. Do not completely submerge it. You really don't want the egg mixture to get in the middle.
For each one, place 1 tablespoon of butter in skillet. Once melted, add French toast and cook 2 to 4 minutes per side, or until golden brown.
Serve with banana slices and maple syrup.
