  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • ½ cup unflavored protein powder
  • 3 tablespoons oat flour
  • 1 tablespoon flaxseed meal
  • 3 tablespoons mini chocolate chips
  • Maldon sea salt for sprinkling

  • In a large bowl, combine all of the ingredients except for the chocolate chips and salt. Using a spatula, mix well until everything is thoroughly combined. The texture should resemble traditional cookie dough, thick yet manageable.
  • If you find the mixture is too wet, add another tablespoon of oat flour gradually, mixing until it reaches the right consistency. It should hold well when rolled into balls.
  • Once your dough is ready, gently fold in the mini chocolate chips until evenly distributed throughout the mixture. This adds delightful bursts of sweetness in every bite.
  • Now, it’s time to shape the dough! Using a small cookie scoop, grab a portion of the dough and roll it into a ball using your hands. Place the rolled balls onto a plate, ensuring they are spaced about 1 inch apart.
