Equipment

  • Food Processor
  • Mixing Bowl
  • Blender

Ingredients

  • 9 each Medjool dates
  • 1/3 cup Dry oats
  • 1/2 cup Sunflower seeds
  • 3 tablespoons Cocoa powder
  • 1/2 cup All-natural peanut butter
  • 4 tablespoons Mini chocolate chips
  • 1/2 teaspoon Vanilla extract

Instructions

  • Begin by placing the oats and sunflower seeds into a food processor. Pulse them until they reach a fine flour-like consistency. This may take a few minutes, so be patient and keep an eye on the texture. You want it to be fine enough to combine well with the other ingredients, but still retain some texture.
  • Next, take your Medjool dates and remove any pits if necessary. Place them into the food processor and blend until they form a sticky paste. This sticky consistency is perfect for binding all the ingredients together.
  • Transfer the date paste into a mixing bowl and add the blended mixture of oats and sunflower seeds. Mix well to combine the dry and wet ingredients.
  • Now it’s time to add in the flavor boosters: incorporate the cocoa powder, peanut butter, vanilla extract, and mini chocolate chips. Use your hands to mix everything thoroughly, ensuring all ingredients are well-combined into a dough.
  • Once you have a uniform mixture, take about two tablespoons of dough and shape it into a ball. Repeat this process until all the dough is shaped. You should end up with several bite-sized energy balls.
  • Finally, enjoy your Peanut Butter Fudge Protein Energy Balls immediately or store any leftovers in the fridge or freezer. They are best kept in an airtight container for maximum freshness.

Notes

Keep these energy balls in the fridge for up to a week or freeze them for longer storage. They make a great grab-and-go snack!
