  • Fill ⅔ of a large saucepan with water and bring it to a boil over high heat. Remove the lid and add a generous amount of sea salt. Stir in your chosen pasta and reduce the heat to medium. Set a timer and stir the pasta every three minutes. Reserve about one cup of pasta cooking water and start testing the pasta four minutes before the suggested cooking time. Once the pasta is tender but with a slight bite, drain it, return it to the pot, add your sauce, and mix in a little reserved pasta water to achieve the desired consistency.

  • Don’t Wash the Pasta: After draining, avoid rinsing your pasta under cold water.
