Ingredients
  

  • 1.5 cups almond flour
  • 0.5 cups coconut flour
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 2 eggs at room temperature
  • 0.25 cups coconut oil melted and cooled
  • 0.33 cups maple syrup
  • 0.5 cups orange juice freshly squeezed
  • 1 orange zest from large orange
  • 0.25 cups almond milk unsweetened
  • 3.5 oz dark chocolate 85% chocolate bar
  • 1 orange zest for garnish

Instructions
 

  • Start by preheating your oven to 350 degrees F. This step is crucial as it ensures your loaf bakes evenly. While the oven is warming, line an 8x4 inch loaf pan with parchment paper or spray it generously with nonstick cooking spray to prevent sticking.
  • In a large bowl, whisk together the dry ingredients: the almond flour, coconut flour, baking soda, and salt. Mixing these properly ensures that your loaf rises uniformly and has a consistent texture.
  • In another large bowl, whisk the wet ingredients together: the eggs, melted and cooled coconut oil, maple syrup, orange juice, and almond milk. Note: Ensure the coconut oil is melted and cooled; otherwise, it may clump when mixed with the eggs.
  • Once the wet ingredients are well combined, pour the dry mixture into the wet mixture. Use a spatula to gently mix them until just combined. Be careful not to over-mix; a few lumps are perfectly fine.
  • Next, pour the batter into the prepared loaf pan. Use a spatula to spread it out evenly. This helps the loaf rise evenly and ensures a beautiful final product.
  • Bake in your preheated oven for 40 to 45 minutes. You’ll know it’s done when a toothpick inserted in the center comes out clean. As the loaf bakes, your kitchen will be filled with an incredible fragrance!
  • Once baked, allow the loaf to cool completely in the pan before removing it. This step is essential to ensure it holds its shape. After cooling, gently lift it out using the parchment paper.
  • While the loaf cools, prepare the dark chocolate glaze. In a small pot, add the dark chocolate bar and place it over low heat. Stir frequently until the chocolate is fully melted and smooth. Be patient; it should come together beautifully!
  • Once melted, pour the glaze over the cooled loaf. Use a spatula or the back of a spoon to spread it evenly, allowing it to drizzle down the sides for a stunning presentation.

  • Storage: This bread should be kept well-covered in foil or plastic wrap at room temperature for up to three days, then I recommend transferring it to the fridge or freezer.
  • Freezing: Simply wrap it in plastic, then tightly in foil and finally place it in a reusable container or freezer-friendly bag for up to three months. Thaw at room temperature once you are ready to eat. You can also feel free to freeze individual slices for a quick on-the-go treat! I recommend freezing it before adding the chocolate glaze.
