Ingredients
  

  • 1 cup butter melted and slightly cooled
  • 1 cup granulated white sugar
  • 1 cup packed dark brown sugar
  • 4 large eggs
  • 1 tablespoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 cup Dutch-processed or unsweetened cocoa powder
  • 1 teaspoon espresso powder optional
  • 1 teaspoon kosher salt
  • 1 ¼ cups chopped chocolate divided

  • Preheat your oven to 350°F. Begin by spraying a 9 x 13-inch baking pan with nonstick cooking spray. This ensures that your brownies won’t stick to the pan.
  • Line the pan with parchment paper, leaving an overhang on the sides. This makes it a breeze to lift the brownies out after baking. Give the parchment a light spray of cooking spray as well.
  • In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar. Whisk until the mixture is smooth and the sugars are dissolved. The texture should be glossy and slightly thick.
  • Add in the eggs and vanilla extract. Continue to whisk until everything is well combined and smooth. The mixture should have a creamy consistency.
  • Sift in the all-purpose flour and cocoa powder. Add the kosher salt and the espresso powder if you’re choosing to use it. Stir the mixture gently until just combined. Be careful not to over-mix, as this can make the brownies tough.
  • Fold in 1 cup of chopped chocolate gently, being careful to keep the mixture fluffy. This will create pockets of melty chocolate throughout the brownies.
  • Spread the batter evenly into your prepared pan. Use a spatula to smooth the top for an even bake.
  • Sprinkle the remaining ¼ cup of chopped chocolate on top of the brownie batter. This will create a deliciously chocolatey crust.
  • Place the pan on the middle rack of the preheated oven and bake for 25 to 30 minutes. The brownies are done when they’re just set to touch in the center. Remember, they’ll continue to cook as they cool, so avoid overbaking.
  • Once done, remove from the oven and let cool in the pan for a bit before lifting out using the parchment overhang. Allow them to cool completely before cutting into squares. For a finishing touch, sprinkle with flaky sea salt if desired.
