Ingredients
  

  • 1/4 cup fresh squeezed lime juice about 3 limes
  • 3 ½ tablespoons Vietnamese fish sauce or more to taste
  • 2 tablespoons sugar brown or white
  • 2 cloves garlic minced
  • 1 Thai chile minced (optional)
  • ½ cup warm water

Instructions
 

  • Start by squeezing the juice from about 3 limes to get approximately 1/4 cup of fresh lime juice.
  • Next, take a mixing bowl and add the fresh lime juice. To this, add 3 ½ tablespoons of Vietnamese fish sauce.
  • Now, measure out 2 tablespoons of sugar and add it to the bowl.
  • Add in 2 cloves of minced garlic to the mixture.
  • If you like a little spice, finely chop 1 Thai chile and add it to your dressing.
  • Finally, pour in ½ cup of warm water to the bowl.
  • Once the dressing is ready, taste it!
  • Let the dressing sit for at least 10 minutes before serving.
  • Store any leftovers in an airtight container in the refrigerator.

Notes

  • Tip 1: Substitute most of the lime juice with unseasoned rice vinegar, if desired.
  • Tip 2: Use within 2-4 days.
