  • 6 medium dates, Medjool
  • 1/2 cup pecans, chopped

  • 1/2 teaspoon ginger, ground
  • 1/8 teaspoon sea salt

  • First, prepare your workspace by gathering all the ingredients. Start with the carrots and peel them if necessary. Then, chop them into smaller chunks to make processing easier. Place the chopped carrots into the bowl of a food processor.
  • Next, process the carrots until they are finely ground. You want them to be almost like a paste, which will help bind everything together later. This should take about one to two minutes.
  • Once the carrots are ready, transfer them to a plate or bowl and return the empty food processor bowl to its base. This is where you'll add the next set of ingredients.
  • Now it's time to add the dates and pecans into the food processor. Process them until they are well combined, and the mixture resembles a chunky paste. This adds a rich flavor and a chewy texture.
  • After that, return the carrots to the food processor, along with the remaining ingredients: almond butter, oats, cinnamon, nutmeg, ginger, and sea salt. Pulse everything together until a dough forms. It should be wet enough to hold together but not sticky.
  • If the mixture feels too wet, you can add a tablespoon or two of flaxseed meal or more oats. This helps absorb excess moisture and allows you to roll the mixture into balls easily.
  • Once you achieve the desired consistency, take small portions of the mixture and roll them into bite-sized balls. The size is up to you, but about an inch in diameter works great.
  • After rolling, place the balls on a plate or baking sheet. This is a great time to let them sit for a few minutes to firm up, although they can be eaten right away!
  • Finally, transfer the rolled bites into an airtight container and store them in the fridge. They can last for up to one week, making them a perfect snack to grab on the go.
