- 1 sheet puff pastry thawed according to package instructions
- 1 tablespoon olive oil or vegan butter
- 1 small shallot finely diced
- 1 clove garlic minced
- 1/2 teaspoon fresh thyme
- 1/2 teaspoon black pepper or to taste
- 8 ounces mixed mushrooms chopped
- 1/2 tablespoon low-sodium tamari
- 1 tablespoon flour for dusting
- 1/2 cup vegan mozzarella cheese
- 1/4 cup vegan parmesan cheese shredded
Thaw the puff pastry according to the package instructions. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Melt olive oil or vegan butter in a sauté pan over medium-high heat. Add the shallot and sauté for 3 to 5 minutes until fragrant. Add the mixed mushrooms, thyme, and black pepper, and sauté for 5 to 7 minutes. Stir in the garlic and tamari, and sauté for an additional 1 to 2 minutes before removing from heat.
Lightly dust a clean surface with flour. Roll out the thawed puff pastry to about 12 inches by 15 to 16 inches. Sprinkle vegan mozzarella and vegan parmesan over the pastry, leaving a 1-inch border. Spread the cooled mushroom mixture evenly over the cheese.
Moisten the clean edge of the pastry with water. Roll the pastry towards the edge, applying gentle pressure, to seal it tightly.
Use dental floss or a sharp knife to cut the rolled pastry into pinwheels. Place the cut pieces on a prepared baking sheet, spaced apart.
Bake in the top rack of the oven for 18 to 22 minutes, or until golden brown and puffed up. Remove from the oven and let cool slightly before serving.
- Mixed mushrooms: I like to use roughly equal parts of cremini, oyster, and shiitake mushrooms for this recipe, but you can use a single mushroom or a combination of your favorite varieties.
