  • 2 cups all-purpose flour

  • Preheat your oven to 350°F. This step is crucial for ensuring the muffins bake evenly and rise properly. While the oven warms up, prepare your muffin tin by greasing it with nonstick spray or lining it with paper liners. This will prevent the muffins from sticking and make cleanup a breeze.
  • In a medium bowl, combine the 2 cups of all-purpose flour, 1 teaspoon of baking powder, and ¾ cup of granulated sugar. Whisk these dry ingredients together until they are well mixed. This ensures even distribution of the leavening agent and sugar, which is essential for consistent baking results.
  • In another bowl, whisk together the 1 large egg, ¼ cup of Greek yogurt, ⅓ cup of vegetable oil, 1 cup of milk, and 1 teaspoon of pure vanilla extract. Mixing these wet ingredients thoroughly will help to create a uniform batter. The yogurt adds a wonderful creaminess and moisture, enhancing the muffins' texture.
  • Now, pour the wet mixture into the bowl of dry ingredients. Mix gently until the ingredients are just combined. Be careful not to over-mix; it's okay if there are a few lumps. Over-mixing can lead to dense, chewy muffins, and we want them light and fluffy.
