Ingredients
  

  • 1 sweet potato
  • salt and pepper to taste
  • 1 tablespoon butter
  • 1 teaspoon brown sugar
  • Ground cinnamon

Instructions
 

  • Wash the sweet potato thoroughly, pat dry, and pierce 3-4 times with a fork.
  • Place on a microwave-safe plate and microwave for 5 minutes. If the potato isn’t fork-tender after 5 minutes, continue microwaving in 1-minute increments until ready.
  • Slice potato in half lengthwise, season with salt, pepper, a sprinkle of brown sugar, and top with 1 tablespoon of butter.
  • Sprinkle with ground cinnamon and serve.

Notes

  • Tip 1: The cooking time may vary depending on your microwave. If yours has less wattage, you may need to cook it longer.
  • Tip 2: Instead of using a fork to test your potato for doneness, I use an oven mitt and squeeze it to see how soft it is.
  • Tip 3: Wrapping your sweet potato in a damp paper towel will make the skin soft and silky.
