Ingredients
  

  • 1 1/2 lbs. rotisserie chicken shredded
  • 2 cups prepared Mexican rice
  • 2 15oz. cans white beans (or black beans, pintos beans or a combination)
  • 1 cup chicken broth
  • 3 tablespoons diced green chili
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • 12 oz. Doritos Salsa Verde Chips (or restaurant style tortilla chips)
  • 3 cups pepper Jack, cheddar, or a combination

Instructions
 

  • 1. Preheat your oven to 450 degrees F. This high heat allows for the cheese to melt and bubble perfectly, creating that golden crust that we all adore.
  • 2. Shred the rotisserie chicken into a large bowl. This chicken is already cooked, making it super convenient. Stir in the prepared Mexican rice until everything is well combined. The rice will soak up the flavors of the chicken and spices.
  • 3. In a saucepan, combine the chicken broth and white beans. Cook until heated through, then add the diced green chilies, chili powder, cumin, and paprika. Stir to combine and let the mixture warm for a few minutes.
  • 4. Transfer the mixture to a blender or food processor. Pulse until it reaches a creamy consistency. If you prefer, you can mash it with a potato masher for texture. The goal is to have a smooth mixture that will blend well with the other ingredients.
  • 5. Now, it’s time to assemble! Spread half of the Doritos Salsa Verde Chips evenly across the bottom of a casserole pan. This layer will provide a crunchy foundation.
  • 6. Next, layer half of the bean mixture over the chips, followed by half of the chicken and rice mixture. Sprinkle half of the cheese on top. The layers will create a beautiful texture and flavor.
  • 7. Repeat the process with the remaining chips, bean mixture, chicken and rice mixture, and cheese. This double-layered effect ensures that every bite is packed with flavor and gooey cheese.
  • 8. Place the casserole in the oven and bake for about 5 to 7 minutes, or until the cheese is melted and bubbly. Keep an eye on it to prevent burning!
  • 9. Once done, remove it from the oven and let it cool for a couple of minutes. Serve it warm, garnished with cilantro and fresh chopped tomatoes, if desired.
