Ingredients
  

  • 4-5 medium zucchini halved lengthwise
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon oregano fresh or dry
  • 1 cup marinara sauce
  • 1 1/2 cups mozzarella cheese shredded
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 400F.
  • Line a sheet pan with foil or parchment paper and set aside.
  • In a small bowl, combine the minced garlic, olive oil, and oregano. Stir until well mixed.
  • Lay the halved zucchini on the prepared baking sheet, cut side facing up.
  • Brush the garlic olive oil mixture generously over the zucchini halves.
  • Top each boat with about 2 tablespoons of marinara sauce, spreading it evenly.
  • Sprinkle a generous amount of mozzarella cheese over the sauce.
  • Season with a sprinkle of salt and pepper to enhance flavors.
  • Bake for 18 to 20 minutes or until the cheese is bubbly and slightly golden, and the zucchini is tender.
  • Remove from the oven and let cool before serving. Enjoy warm!

Notes

If you have leftovers, store them in an airtight container in the fridge for up to three days. Reheat in the oven for the best texture.
