Baking Sheet
- 1 recipe Basil Lemon Chicken
- 12 oz. cherry tomatoes
- 1 small zucchini halved and sliced
- 1/2 bunch asparagus ends trimmed, cut into 1” pieces
- 4 cloves garlic minced
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 pound linguine or thin spaghetti
- 1 cup reserved pasta water (you will not use all of it)
- 1 small red onion chopped
- 1/4 cup lemon juice (1-2 lemons)
- 1 tablespoon oregano finely chopped fresh
- 1 teaspoon oregano dried
- 1 1/2 teaspoons thyme fresh or 1/2 teaspoon dried
- 1/4 cup parsley chopped
- 1/4 cup basil chopped
- 1/2 cup Parmesan cheese freshly grated or more to taste
- 1 serving bacon crumbled (optional)
Marinate chicken according to your recipe directions.
Preheat oven to 400°F. Add vegetables, garlic, olive oil, salt and pepper to a baking sheet and toss to combine. Line vegetables on a baking sheet in a single layer. Roast for 12-15 minutes or until asparagus is crisp-tender.
Meanwhile, cook pasta al dente in generously salted water according to package directions. Reserve 1 cup pasta water before you drain pasta.
Remove chicken from marinade and grill or cook indoors by heating 1 tablespoon olive oil in a skillet over medium high heat. Add chicken and cook for 3-5 minutes or until well browned on one side. Flip chicken over, reduce heat to medium, cover and cook an additional 5-7 minutes until cooked through.
Add red onion to the same skillet chicken was cooked in and sauté until soft and translucent, approximately 5 minutes.
Add red onion to the cooked pasta, along with thyme, oregano, parsley, basil, lemon juice, and roasted vegetables. Toss to combine, adding reserved pasta water until reaching desired consistency. Add desired amount of Parmesan.
- Tip 1: Use quality extra virgin olive oil for better flavor.
- Tip 2: Pound the chicken for even cooking.
- Tip 3: Don’t marinate the chicken for too long.
- Tip 4: Use reserved pasta water to achieve desired sauce consistency.
- Tip 5: Bring chicken to room temperature before cooking.
