Ingredients
  

  • 12 small corn tortillas
  • 1 15 ounce jar salsa verde
  • 2 cups shredded Mexican blend cheese
  • 1 15 ounce can black beans rinsed and drained
  • 6 large eggs
  • pico de gallo for topping
  • avocado for topping
  • crumbled cotija or feta for topping

Instructions
 

  • Preheat your oven to 375 ℉. This temperature is ideal for baking and will ensure that the cheese melts perfectly.
  • Spread 1/4 cup of salsa verde on the bottom of a 9×13 inch baking dish. This first layer sets the flavor foundation for the casserole.
  • Layer 6 tortillas across the bottom of the pan, overlapping them if necessary to cover the entire base.
  • Pour half of the remaining salsa over the tortillas, followed by sprinkling half of the black beans and 1 cup of cheese on top. This layering technique builds flavor and texture.
  • Now, add the remaining 6 tortillas on top, followed by the rest of the salsa, black beans, and the rest of the cheese.
  • Bake this sumptuous creation in the preheated oven for about 10 minutes, or until the cheese is melted and bubbling.
  • Once melted, remove from the oven and use the back of a spoon to create 6 wells in the cheese. These will hold your eggs beautifully.
  • Crack an egg into each well and season them lightly with salt and pepper. This seasoning enhances the flavors of the eggs.
  • Return the casserole to the oven and bake for another 15 to 20 minutes, or until the whites are set but the yolks remain runny. Perfectly baked eggs are key for this dish.
  • When finished, top with pico de gallo, avocado, and cotija (or feta). These fresh toppings add a delightful contrast to the rich flavors.

Notes
