  • 1.5 pounds boneless skinless chicken thighs
  • 2 tablespoons olive oil divided
  • 3 whole garlic cloves
  • salt and pepper to taste
  • 3 teaspoons minced garlic
  • 0.25 cup honey
  • 3 tablespoons stone ground dijon mustard
  • green onions or fresh parsley for garnish

Instructions
 

  • Start by heating a medium-sized skillet over medium heat. Add half of the olive oil and toss in the whole garlic cloves. Sauté them for a minute until they start to become aromatic, releasing their flavors into the oil.
  • Next, season the chicken thighs with salt and pepper. Carefully place them into the skillet, making sure not to overcrowd the pan. Cook for about three to four minutes on each side, or until the chicken is golden brown and cooked through. Once they’re done, remove the thighs from the skillet and set them aside on a plate.
  • In the same skillet, add the remaining olive oil along with the minced garlic. Sauté for one to two minutes until the garlic is fragrant but not burnt. It should look golden and slightly tender.
  • Now, it’s time to make the sauce! Pour in the honey and the dijon mustard. Stir them together well until they’re combined, creating a smooth and sticky mixture that smells heavenly.
  • Add the cooked chicken thighs back into the skillet. Allow them to bask in that wonderful sauce for a couple of minutes, turning them occasionally so that they get nicely coated.
