Ingredients
  

  • 2 medium chicken breasts chopped
  • 1 cup bell pepper chopped
  • 1/2 unit onion chopped
  • 1 unit zucchini chopped
  • 1 cup broccoli florets
  • 1/2 cup tomatoes chopped or plum/grape
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon italian seasoning
  • 1/4 teaspoon paprika optional

Instructions
 

  • Preheat your oven to 500 degrees F. This high temperature will ensure that the veggies get a nice char while the chicken cooks perfectly.
  • Chop all the veggies into large pieces. I like to make them roughly the same size so they cook evenly. The vibrant colors of the bell pepper, zucchini, and broccoli make this step visually pleasing.
  • In another cutting board, chop the chicken into cubes. Make sure to cut them into similar sizes as the vegetables for even cooking. This is where the excitement builds as you prepare the main protein for your meal.
  • Place the chicken and veggies in a medium roasting dish or a sheet pan. Arrange them in a single layer for the best roasting results. You want them to have room to breathe and get that golden char.
  • Add the olive oil, salt, black pepper, italian seasoning, and optional paprika. Drizzle the olive oil generously over everything.
  • Toss to combine all the ingredients well. I find using my hands is the best way to ensure everything is evenly coated.
  • Once everything is mixed, place the pan in the preheated oven. The smell of roasting chicken and vegetables will start to fill your kitchen as they cook.
  • Bake for about 15 minutes or until the veggies are charred and the chicken is cooked through. Keep an eye on them to avoid burning; you want that perfect golden brown.
  • Once done, take them out of the oven and let them rest for a few minutes. This resting time allows the juices to redistribute in the chicken.
