  • 5 tablespoons vanilla protein powder of choice
  • 1 tablespoon coconut flour
  • Pinch sea salt
  • 2 tablespoons + 2 teaspoons unsweetened applesauce
  • 1 teaspoon unsweetened vanilla almond milk optional but recommended
  • 1/4 teaspoon butter extract optional but recommended
  • 1/2 tablespoon dairy-free mini chocolate chips

Instructions
 

  • In a medium bowl, whisk together the protein powder, coconut flour, and sea salt. Make sure everything is well combined, and the dry ingredients are nicely mixed. The texture should be light and fluffy.
  • Add the applesauce, almond milk, and butter extract to the dry mixture. Stir until you achieve a fluffy and smooth consistency. It should all come together beautifully, forming a dough that holds together without being sticky.
  • Stir in the dairy-free mini chocolate chips. This is where the magic happens! The chocolate chips will melt slightly into the warm dough, creating pockets of sweetness throughout.
  • Chill the cookie dough in the refrigerator for 10 to 15 minutes if you can wait. This will help it firm up a bit and make it even easier to scoop. However, if you can’t resist, feel free to enjoy it right away!
