Ingredients
  

  • 1 cup mashed banana (from about 2-3 very ripe bananas)
  • 2 eggs
  • ¼ cup honey (or maple syrup)
  • ¼ cup unsalted butter (melted and slightly cooled; or coconut oil)
  • 1 teaspoon vanilla extract
  • 1 cup oat flour (or oatmeal ground up in the food processor)
  • ¼ cup cocoa powder
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup chocolate chips (roughly chopped or use mini chocolate chips)

Instructions
 

  • Preheat your oven to 350°F (about 175°C).
  • In a medium mixing bowl, combine the mashed bananas, eggs, honey, butter, and vanilla extract. Whisk until smooth.
  • Add the dry ingredients: oat flour, cocoa powder, baking powder, salt, and chocolate chips. Stir gently until fully combined.
  • Pour the batter into the prepared pan and smooth out the top.
  • Bake for 20 to 22 minutes, until the edges are set.
  • Remove from oven and let cool completely before slicing.
  • Slice into squares and enjoy!

Store brownies at room temperature or in the fridge in an airtight container for up to 5 days.
