Ingredients
  

  • 2 stalks Broccoli (or one XL stalk)
  • 2 tablespoons Olive oil
  • 1/2 teaspoon Garlic salt

Instructions
 

  • Preheat your oven to 450 degrees F. This high temperature will help to roast the broccoli quickly, giving it a lovely texture.
  • While the oven heats, prepare a large, rimmed baking sheet (18X13 inches works well). This will be where your broccoli rice will roast.
  • Next, take the stalks of the broccoli and cut them off. You want to chop them into rough chunks to make it easier for the food processor.
  • Place the chopped stalks into the food processor and pulse until the pieces are as small as rice. Make sure to monitor the texture; you want it finely chopped, but not mushy.
  • Dump the processed broccoli rice onto the prepared baking sheet, spreading it out evenly.
  • Now, cut the tops of the broccoli into large florets. Again, pulse these in the food processor until they are also the size of rice.
  • Dump the florets onto the baking sheet with the stalks, mixing them together for an even cook.
  • Drizzle the olive oil and garlic salt over the broccoli rice. Toss everything with your hands to coat the pieces well in the oil and seasoning.
  • Spread the broccoli mixture in a thin layer across the baking sheet. This will ensure even roasting and crispiness.
  • Roast in the preheated oven for 5 minutes. This will start to cook the broccoli and give it a wonderful roasted flavor.
  • After 5 minutes, use a large flat spatula to flip the rice and re-spread it in a thin layer.
  • Continue roasting for another 5 minutes, watching closely to ensure it doesn’t burn. The broccoli should be tender and slightly crispy.

Notes
