  • 1 pound ahi tuna
  • 1 tablespoon olive oil
  • 2 tablespoons cajun seasoning
  • 1 mango, diced small
  • 1/4 cup red onion, diced small
  • 1/4 cup fresh cilantro, minced
  • 1/4 teaspoon salt
  • 8 inch flour tortillas (substitute corn tortillas for a gluten-free option)

  • Preheat your grill to medium heat. This ensures a good sear on the ahi tuna. A hot grill prevents sticking and helps achieve those beautiful grill marks that not only look great but enhance flavor.
  • Drizzle the olive oil generously over all sides of the ahi tuna. This will help to prevent sticking and add moisture, ensuring your tuna cooks beautifully. Then, season well with the cajun seasoning, making sure it's evenly distributed to pack that flavor punch!
  • Once the grill is hot, place the seasoned tuna onto the hot grate. Sear the fish for about four minutes on one side. Look for a nice golden crust to form. It’s important not to crowd the grill; give each piece space to breathe.
  • After four minutes, flip the ahi tuna carefully using tongs. Sear the other side for an additional four minutes. The goal is to achieve a beautiful crust while keeping the inside pink and juicy. Trust me, undercooked tuna is better than overcooked!
  • Once done, remove the tuna from the grill and set it aside to rest. This helps retain its juices, making every bite incredibly tender. Let it rest for about five minutes.
  • While the tuna rests, combine the remaining ingredients in a small bowl. Toss together the diced mango, red onion, cilantro, and a sprinkle of salt. This vibrant salsa will elevate your tacos!
